We watched Goodfellas in high school when my film buff buddy convinced our teacher he could take a few classes off by rolling it. The principal stopped by while they were stabbing.

I'm the weirdo who thought Goodfellas was kinda meh (look, not all my opinions are gonna be good).
Ha! Well, like you said, it's an opinion. And same with mine.
Untouchables is solid.
I actually enjoyed Untouchables, but I don't find it too rewatchable.
But the BEST gangster film is Miller's Crossing.
I don't think it's the best, but it's REALLY fucking good. I always appreciate Coen dialogue, but especially when they create their own slang. And it's SUCH a beautiful film, with really wonderful and flawed characters, and so many lines I'm aching to use. Anytime I meet someone named Tom, I can't wait for a chance to say "Jesus, Tom," just hopefully not after he's hit me in the face with a chair.
 
I'll also put Road to Perdition on the scoreboard for my top gangster films list. "I shoot the dead"
“He pulls a knife? You pull a gun. He sends one of yours to the hospital? You send one of his to the MORGUE. That’s the Chicago way. And that’s how you get Capone.”
If nothing else, this line goes super hard and nobody can deny that.
 
I'm not a fan of mobster movies. I just don't appreciate the attempt to display any of them as a sympathetic hero.
 
Ultimately not what the best ones are about though.
You might be right. But that's at least what Casino and Reservoire Dogs are about. And Sopranos, I think. Scarface. Goodfellas.

I'm likely missing some subtext, but my only takeaway from them is that we get to enjoy the power fantasy of it all while being comforted that things will at least go bad for them toward the end.

I'm sure there all well-made and well-acted, just not for me.

One of the big reasons I love The Untouchables: good may be dumb, but evil is evil.

But yeah, also not a huge fan of mobster movies. Like really my favorite mob movie is The Dark Knight.
